Until Spring in Paris, There’s Table 28

Everyone loves Spring in Paris. That’s because American-expat chef Daniel Rose made the 16-seat restaurant he opened in 2006 on the rue de la Tour-d’Auvergne a hit with food critics and fickle French foodies alike. Rose prepared a set menu of four courses using the freshest seasonal finds at the daily market, adding a new level of culinary energy to the Paris dining scene.

But now Rose is moving Spring to a new address in the 1st arrondissement, opening the expanded digs in the spring. While construction at the new location is underway, Rose isn’t sitting around idle. He transformed the Tour-d’Auvergne space into a new restaurant: Table 28, with two menus—priced at or near 29 and 35 euros—replacing Spring’s single menu. This time, the 30-something, Chicago-bred chef is offering dishes served at the same time to all tables at a fixed time. Rose tore out the open kitchen and replaced it with a rotisserie grill, offering dishes like Coucou de Rennes (a Breton hen) and cochon de lait (suckling pig) to lucky diners. Rose has also carefully selected the wines on his list, and is even offering a “take out” option.

So until Spring re-opens in March at 6 rue Bailleul, fans of Chef Rose can enjoy his unique approach to casual fare at Table 28. Or stop by the newly opened Spring Boutique (52, rue de l’Arbre Sec, 1st arr.) for some delicious goodies hand-selected by Rose.
